Tarragon is native to Siberia and has an anise like flavor. It is used in classic French cuisine with poultry, fish / Dover Sole, vegetables / artichokes, sauces (especially bearnaise), lobster / shellfish, eggs & cheese, mushrooms, vinaigrettes, and stuffings.
