The New Mexico Chile is a prized crop grown in the state for which it is named. These red chiles are a fully ripened version of their green counterpart. Beyond the color, the main difference between New Mexico green and red chiles are in flavor. In other parts of the country, it is also known as an Anaheim Pepper.
