Porcini, an Italian word that means “little pigs,” is a wild, brown-to-tan mushroom with a broad cap. This pungent, earthy, and woodsy seasoning has been valued by European chefs for centuries.

  • Adds flavor in liquid-based dishes like stews, broths, and soups.
  • Make your own breaded mushrooms! Combine this powder with flour, sea salt, and pepper, then add enough water to create a batter. After cleaning fresh mushrooms, dunk them in the batter and allow the excess to drip off. Follow that by coating each mushroom in panko bread crumbs and fry in oil until golden brown on both sides. Cool slightly on a towel-lined plate before serving.
